Lychee water

Ingredients

1 cup peeled and pitted lychees
1 tsp vanilla extract
3 cups of water
Sugar or sweetener (optional)

Preparation

Blend all the ingredients. Serve in a jug with ice. If it feels too thick, add another cup of water.

Smoked fish with lychee sauce

Ingredients

800 grams of fish
4 cups basil leaves
1 cup of peanuts
1 cup parmesan cheese
1 cup olive oil
Lychee sauce
2 liters of natural lychee pulp
1/2 cup onion
3 tablespoons of olive oil
1 teaspoon minced garlic
Salt to taste
Pepper to taste
1/3 cup rice
1/3 cup brown sugar
3 grams of black tea
1 10 cm cinnamon stick
1 cup corn
1/4 piece of onion
1 clove of garlic
Mint, necessary quantity
1 cup white rice
2 cups of water
1 teaspoon salt
1 tablespoon vegetable oil

Preparation

Wash the fish thoroughly and cut into 200-gram pieces. Season the fish with salt, pepper and lemon. Coat with pesto. Set aside.

Finely chop basil, peanuts and cheese. Slowly add oil and mix. Set aside.

Heat lychee pulp without letting it boil, blend and set aside. Sauté onion in oil, add garlic. Season with salt and pepper. Grind and add to lychee pulp.

Cook corn with onion, garlic and plenty of mint, all finely chopped. Set aside. Put rice, water, salt and oil in a pot. Stir a little and leave for 5 minutes or until the water dries up. Add cuitlacoche, leave on low heat and cover. Leave for another 15 minutes, turn off and let cool.

Grate the Parmesan cheese. Melt it in a pan until it releases all the fat and turns golden. Turn it over so that it is golden on both sides. Make the tile shape and shape it into a curve.

To smoke, place a sheet of aluminum foil in a pan with a lid and add rice, sugar, tea and cinnamon. 1 egg white
1 tbsp. sugar
2 cups of ground cookies
1/2 cup melted butter
3 tbsp ground almonds
Sugar sprinkles for decoration

Preparation

Blend the coconut cream with the cream cheese and lychee pulp. Transfer this mixture to a bowl. Hydrate the gelatin in the water. Heat in the microwave for 10 seconds and stir. Repeat until the gelatin is completely dissolved. Add to the bowl with the previous mixture and stir well.

Beat the egg white with the sugar until soft peaks form and fold into the lychee mixture. Pour into individual moulds, leaving a half centimetre space at the top, and refrigerate. Separately, mix the cookies with the butter and almonds.

Place the cookie crust in the free space, pressing down to compact it. Refrigerate for 15 minutes and unmold. Decorate with chochitos.

Lychee ice cream

Ingredients

1 small can (370g) condensed milk
800 g natural lychees or in syrup
1 teaspoon grated ginger
fresh mint

Preparation

Peel the lychees or drain them of the syrup if they are canned and mash them into a puree. Mix the fruit with condensed milk and add ginger.

Pour the mixture into a bowl and leave in the freezer for about 4 hours, stirring with a fork until almost frozen.

Serve in glasses or dessert cups, sprinkled with chopped mint leaves.

Lychee liqueur

Ingredients

4 liters of water
2 and ½ kg of fresh lychees
1 1/2 kg fine sugar
quart citric acid oz
1 teaspoon of yeast
1/4 teaspoon tannin
Chablis, yeast wine

Preparation

Start by heating the water. Now, peel the lychees and remove the seed. Next, chop the remaining fruit and add it to the sugar in a primary container. Next, pour in enough boiling water to make a gallon of liquid and stir until the sugar dissolves. Allow the mixture to cool to room temperature.

Add the remaining ingredients. Note the additional tannin requirement for wines. Lychee is not acidic enough on its own. Cover the primary vessel with a cloth. Allow the mixture to sit until vigorous fermentation occurs. Stir every day for five days.

The liquid should be strained through a nylon sieve into a secondary container, leaving an air pocket. The remaining pulp can be discarded. Wait up to 30 days for the wine to settle and no sediment to fall out. This step is especially important for lychee wine.

I've never had fresh lychees although canned are often offered as a dessert in Chinese restaurants in Ireland. The puree sounds rather good!
